Meal prepping happiness


Oh meal prepping, how I do love thee 💚

One of my biggest tips for eating healthy AND feeling organised, is to do all the washing and chopping of veges ahead of time. It seems really basic, but it works a treat for me.

I spent a very happy hour doing the ingredients for tonight’s chicken pasta dish with the Kardashians playing on my iPad (I know, stay classy Fiona 😅😆) It’s so nice to have those little dishes of goodness and happiness ready to roll at mealtime. I can tell you there have been times in the past when I haven’t done this and the barrier has seemed so big that a pizza delivery seemed the best idea at the time.

Are you a meal prepper? Or a fly-by-the-seat-of-your-pants girl? My mum always says that the impending deadline of a mealtime gives her extra incentive 😁

  1. Thank you for this reminder, Fiona. I have not been a meal prepper, but since I've been spending more time at home, I realized that my energy level wanes toward dinner time and if I get in the kitchen MUCH earlier and get the chopping and measuring done, I can look forward to cooking instead of dreading it. My husband is always so kind to say, "let's order something... " which is not what I want to do. Thanks for making a fleeting observation into a lifestyle. xo karen

    1. You've described my kitchen later in the day too, Karen. I just have so much more oomph earlier, and it's such a treat to come into the kitchen at 6pm and just pop a few dishes in the oven, or empty the stirfry ingredients into our wok :)
